Rainbow Pot Of Gold Cupcakes for St. Patrick's Day
I was trying to come up with a fun and easy idea for decorating St. Patrick's Day cupcakes, and was inspired by one of our favorite techniques, rainbow swirled frosting. Rainbows are a fun way to celebrate St. Patty's Day — especially when there's a pot of gold at the end!
Using our rainbow frosting technique, I painted stripes of paste food coloring on the inside of an icing bag in a rainbow of bright, bold colors, with no gaps between the stripes. Then I scooped some white buttercream in the middle of the bag and twisted it, revealing a rainbow of colors all around!
I squeezed out a little of the frosting until the colors started showing, and then piped large rosettes onto my cupcakes. Our rainbow frosting technique makes it so easy to get glorious swirls of color!
With the rainbow done, I just needed some gold. I thought about using gold chocolate coins, but I didn't have any on hand, and wanted something completely edible. I struck gold (hah!) when I found some yellow candy melts and gold pearl lustre dust in my cake decorating stash. I dusted each chocolate disc with some gold to give it sparkle.
Then I just tucked three into each cupcake.
I couldn't be more pleased with the results. They look super cute and only took a few minutes to make.
