Easter Peep Cookie Cream Tart for Spring
We so enjoyed the trendy cookie cream tarts we've made in the past with British and fall themes, and decided that Easter was a perfect reason to make another. Nothing screams Easter candy like marshmallow Peeps, so we knew right away that the bunny-shaped Peeps would be the focal point of our Easter cookie cream tart.
In addition to decorating with Peeps, I decided to make the cream tart itself in the same shape. For that, I made a Bunny Peep pattern that I'm happy to share with you guys. Just print both pages, tape them together, and cut out the shape to use as a pattern. It's sized perfectly to fit on a standard 13" x 18" half-sheet baking pan.
Make the cookie base
With the pattern in hand, I used the same cookie recipe and technique from our first cream tart and cut out two giant bunny-shaped cookies. I worked directly on parchment paper on the cookie sheet, so I didn't have to move the dough after it was cut.
Add the cream filling
After the cookies cooled, I mixed up a double batch of my luscious cream filling recipe and then used a large 2A round icing tip and disposable bag to pipe blobs of filling on the first cookie. Then I carefully stacked the second cookie on top, and finished it with more filling. To keep it as neat and tidy as possible, I did the outer edge first, then filled it in.
Add the edible decorations
Then we started adding all the toppings, focusing first on the Peeps, of course, and filling in with pastel flowers and candies.
We used macarons, pink carnations, and slices of strawberry-cream cake rolls. We even found some Pepperidge Farm Chessmen Cookies featuring tulips that worked perfectly. We filled in the smaller spaces with pastel Easter-shaped mini marshmallows, jelly beans, and tiny pearlized candy balls. For a final garnish of greenery, we tucked in sprigs of fresh dill, which I think look just like tiny carrot tops!
This Peep-shaped cookie cream tart is perfect for Easter brunch or any spring celebration, and it tastes just as great as it looks!

H, it's hard to say for sure, but I would guess somewhere between 10-15 servings for a cake this size. Enjoy!
