For this delicious savory upside down puff pastry, you'll need some thinly sliced onion (red or white), a slice of brie cheese, and some fresh rosemary.

The taste of this onion, brie, and rosemary puff pastry tart is out of this world, with the sweetness of the onion, the rich and tangy taste from the brie, and the earthy rosemary notes. It's hands-down my favorite of these recipes.

Pear, Brie, and Bacon Puff Pastry Tarts

One of my favorite flavor combos ever is pear, brie, and bacon. Using bacon bits is an easy shortcut to match with slices of pear and a slice of fresh brie.

Putting this combo on a puff pastry tart seemed like a perfectly natural thing to do, and the flavor did not disappoint. So delicious!

Sweet Peppers and Cream Cheese Puff Pastry Tarts

One of my favorite charcuterie board items is golden peppadew peppers. They are sweet and not spicy, and pair perfectly with cream cheese. Sliced the peppers into rings and cut a slab of cream cheese to put on top.

What a great combo for a puff pastry tart! The sweetness of the peppers pairs perfectly with the rich cream cheese, which melts into a delicious, soft texture.

Apple, Brown Sugar, and Cinnamon Puff Pastry Tarts

Apple is the most traditional recipe for these upside down puff pastries, of course we topped the slices with some brown sugar and a sprinkle of cinnamon.

They taste just like mini apple pies, but are so much faster to make! It's a classic flavor combo that's definitely a crowd pleaser.

Banana and Nutella Puff Pastry Tarts

No attempt at pastry would be complete without something involving chocolate! We used Jo's favorite flavor combo of bananas and Nutella to create a sweet dessert puff pastry tart.

The resulting rich, dark chocolate flavor with the sweet, baked bananas are a magical combo. If you have a real sweet tooth, try adding a little brown sugar to amp the kick it up even further.

FAQ and Tips for Making Upside Down Puff Pastry Tarts

As simple as these tarts are to make, there are a few things you can do to improve your chance of success. Here are some frequently asked questions and tips I can share to help you make upside down puff pastry tarts.

Can I use frozen puff pastry?
Yup, frozen works great! Just thaw it in the fridge for a few hours or on the counter for about an hour. You can even zap it in the microwave for a few seconds if you need to thaw it in a hurry.

Do I have to use parchment paper?
Yes, you really do. Otherwise the sweet, caramelized goodies will stick to your baking pan instead of to your puff pastry when you flip it over.

Can I use any ingredients?
Just about! Try sweet or savory combinations that you know work and that would hold up well to a strong bake. If you're nervous about trying something new, just make one tart first as a test. If it works, go for it!

Are there ingredients I should avoid?
Especially large, chunky ingredients might not stick to the baked crust unless you also have a very saucy ingredient to go with it. Don't use anything that's super wet, or it is more likely to leak out everywhere. Keep in mind that colors darken upon baking, so don't be surprised if some ingredients turn very brown.

Does it matter how I layer the ingredients?
Only if you care about the visual look after baking. Remember that everything will be upside down after it's flipped over, so layer your ingredients for best display. Put small things down first (nuts, herbs) then larger on top (fruit slices, cheese).

Can I make these ahead of time?
They really do taste best warm and right out of the oven, so you get that super flaky, crumbly crust. But if you have leftovers or simply must do them ahead of time, store them in an airtight container in the fridge and reheat them before serving.

Who came up with this brilliant idea?
All the credit for these upside down puff pastries goes to TikTok creator @lilyghodrati, whose viral trend took the internet by storm.
